Instructions
- 1Heat a large skillet over medium-high heat for 1 minute, then add the ground beef and cook for 8–10 minutes, breaking it into small pieces with a spoon, until no longer pink and the internal temperature reaches 160°F.
- 2Transfer the cooked beef to a plate and drain any excess fat from the skillet, leaving a light coating; return the skillet to medium heat.
- 3Crack the eggs into a large bowl, whisk until fully combined, then pour into the skillet and cook for 6–8 minutes over medium heat, stirring frequently, until the eggs are set and no longer runny.
- 4Return the cooked beef to the skillet with the eggs, crumble the fat-free cheddar directly over the mixture, and stir for 1–2 minutes over low heat until the cheese is melted and everything is evenly combined.
- 5Season with salt to taste and stir well.
- 6Divide the beef and egg mixture evenly into 8 airtight containers while hot, pressing down gently to pack each portion.
