  • 16 oz Low Sodium Beef Broth
  • 28 oz Canned Diced Tomatoes
  • 5 tbsp Sweet Pickle Relish

    Sweet pickle relish. Found near ketchup and mustard.

  • 1 tbsp Yellow Onion
  • 1 tbsp Garlic powder
  • 2 tbsp Garlic
  • 800 g Cottage Cheese (2%)

    1% or 2% small-curd cottage cheese. Good Cultures or Daisy brand.

  • 2 Fat-Free Cheddar Cheese(454g)
  • 1 cup Skim Milk

Instructions

  1. 1Season ground beef with marinade ingredients (salt, onion powder, garlic powder, minced garlic, black pepper). Add diced tomatoes and sweet relish. Cook in slow cooker on high for 2-3 hours.
  2. 2Cook bacon until crispy.
  3. 3Make caramelized onions: cook diced yellow onions with beef bone broth, Worcestershire, soy sauce, and Dijon (and optional herbs) until all liquid has evaporated and onions have a nice brown texture.
  4. 4Cook pasta to almost done.
  5. 5Blend sauce: combine cottage cheese, fat free cheese, fat free milk, and water.
  6. 6Add pasta and sauce to slow cooker with beef.
  7. 7Top with caramelized onions and bacon.
  8. 8Divide into 10 meal prep containers.
