Ingredients

6 servings
  • 1 Yellow Onion(150g)
  • 2 lbs 96/4 Ground Beef

Extra-lean ground beef (96% lean / 4% fat). Walmart carries Great Value 96/4.

  • 4 Rotini Pasta(228g)
  • 1 Fat-Free Cheddar Cheese(227g)
  • 1 Fat-Free Cheddar Cheese(227g)
  • 24 oz Canned Diced Tomatoes

Instructions

  1. 1Dice the onion into small pieces and set aside.
  2. 2Heat a large skillet over medium-high heat. Add the ground beef and cook for 8–10 minutes, breaking it apart with a spoon, until no longer pink and browned throughout. Drain excess fat if needed.
  3. 3Add the diced onion to the browned beef along with onion powder, garlic powder, Italian seasoning, and paprika. Stir and cook for 2–3 minutes over medium heat until fragrant.
  4. 4In your crockpot, create the first layer: spread half of the diced tomatoes on the bottom, followed by half of the rotini pasta (uncooked), then half of the beef mixture, and finally one bag of the fat-free cheddar.
  5. 5Repeat the layering: remaining diced tomatoes, remaining rotini pasta, remaining beef mixture, and the second bag of fat-free cheddar on top.
  6. 6Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the pasta is tender and the cheese is melted and bubbling around the edges.
  7. 7Let the lasagna rest for 5 minutes, then divide evenly into 6 airtight containers while hot, ensuring each portion has layers of pasta, beef, and cheese.
