Ingredients

2 servings
  • Beef Ribeye, Boneless
  • Avocado oil(30g)
  • 1 teaspoon fine sea salt (or seasoned salt)
  • 1/2 teaspoon freshly-cracked black pepper
  • Garlic powder(3g)

Instructions

  1. 1Remove the steaks from the refrigerator and let them sit at room temperature for 20–30 minutes until fully tempered.
  2. 2Pat the steaks dry with paper towels, then brush both sides evenly with avocado oil and season generously with garlic powder on both sides.
  3. 3Heat a cast iron skillet over high heat for 6–8 minutes until smoking hot. Place the steaks in the pan and press firmly with a spatula for 30 seconds to sear the bottom surface.
  4. 4Flip the steaks with tongs and sear the opposite side for 30 seconds over high heat, until a golden-brown crust forms.
  5. 5Transfer the hot skillet to a preheated 400°F oven and cook for 3–4 minutes until the internal temperature reaches 5°F below your target doneness (130°F for medium-rare, checked with a meat thermometer inserted at the thickest point).
  6. 6Remove the skillet from the oven using an oven mitt. Transfer the steaks to a plate, brush with any pan juices, and tent loosely with foil. Rest for 3–5 minutes before serving.
  7. 7Serve immediately, or cool completely and divide into airtight containers while warm. Refrigerate for up to 3 days or freeze for up to 3 months.
