Instructions

  1. 1Cut the beef into thin bite-sized strips. In a small bowl, combine the beef with 1 tablespoon low sodium soy sauce and stir to coat. Set aside while you prep remaining ingredients.
  2. 2Cook the brown rice according to package directions. Once cooked, set aside and keep warm.
  3. 3In a medium bowl, whisk together the soy sauce, maple syrup, rice vinegar, minced fresh garlic, grated fresh ginger, red pepper flakes, cornstarch, and water until smooth. Set the sauce aside.
  4. 4Heat 1/2 tablespoon olive oil in a large wok or deep sauté pan over medium-high heat until shimmering. Add the beef and cook for 3–4 minutes, stirring occasionally, until browned on all sides and no longer pink in the center. Transfer the beef and any juices to a clean plate.
  5. 5Add the remaining 1/2 tablespoon olive oil to the pan. Add the bell pepper and cook for 3–4 minutes over medium-high heat, stirring frequently, until slightly softened and lightly browned at the edges. Stir in the water chestnuts and return the beef with its juices to the pan.
  6. 6Pour the teriyaki sauce into the pan and stir constantly for 2–3 minutes over medium-high heat until the sauce thickens and coats the beef and vegetables. Fold in half of the green onions.
  7. 7Divide the brown rice evenly into 3 airtight containers while hot. Top each portion with equal amounts of the beef stir fry while hot. Sprinkle sesame seeds and remaining green onions over each container.
  8. 8Seal containers and refrigerate. Reheat in a microwave (covered, 2–3 minutes) or on the stovetop before serving.
