Instructions

- 2Secure the lid. Choose Pressure Cook on HIGH for 5 minutes.
- 3Let the pressure release naturally for 10 minutes before flipping the valve and releasing the remaining pressure.
- 4Meanwhile, bring the chicken stock to a boil in a medium pot over high heat. Whisk in the polenta, reduce the heat to medium and cook, stirring often, until the polenta is tender and has absorbed all the liquid, about 15 minutes. Stir in remaining 1 teaspoon salt and remove from heat. Let sit for 5 minutes (see Note 2)
- 5Using two forks, shred the chicken in the tomato sauce. Divide the polenta into 6 bowls. Serve the chicken and sauce over the polenta, sprinkled with parsley, if using.
