Instructions
- 1Cut a pocket three-quarters of the way through the thickest side of each chicken breast, being careful not to cut all the way through. Season the chicken inside and out with salt, pepper, and dried oregano. Rub some of the sun-dried tomato oil from its jar over each breast, working some seasoning into the pockets.
- 2Stuff each pocket with 2 slices of fresh tomato, 2 teaspoons of sun-dried tomato strips, 1 slice of part-skim mozzarella, and a few fresh basil leaves. Secure each breast with 3–4 toothpicks placed diagonally to seal the filling inside.
- 3Heat 2 teaspoons of sun-dried tomato oil in a large skillet over medium-high heat. Once shimmering, place the chicken breasts in the pan and cook 2 minutes per side over medium-high heat until golden brown on both surfaces.
- 4While the chicken cooks, whisk together the minced fresh garlic, balsamic vinegar, and brown sugar in a small bowl until the sugar dissolves.
- 5Pour the balsamic mixture around the chicken in the skillet (not directly over it). Reduce heat to medium and simmer 2–3 minutes, stirring the sauce occasionally, until it thickens slightly and coats the back of a spoon.
- 6Reduce heat to medium-low, cover the skillet with a lid, and continue cooking 10–15 minutes over medium-low heat until the chicken reaches an internal temperature of 165°F and the mozzarella has melted completely.
