Ingredients

4 servings
  • Olive oil(10g)

Regular (not extra-virgin) olive oil for high-heat cooking. EVOO for dressings.

  • Bacon(113g)
  • Yellow Onion
  • Garlic(360g)
  • Shrimp(454g)
  • Cream, Heavy Whipping(300g)
  • Parmesan Cheese(120g)

Grated Parmesan — the shelf-stable canister is fine for cooking.

  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)
  • Parsley, Fresh(15g)

Instructions

  1. 1Heat oil a large skillet over medium-high heat. Fry the bacon until crispy. Drain off some excess fat, keeping about 1 teaspoons worth in the pan. Add the onion and garlic and fry until onion is transparent (about 1 minute).
  2. 2Reduce heat to low. Add shrimp and let cook for 1 minute, while stirring occasionally.
  3. 3Pour in half and half (or cream) and add in parmesan cheese. Bring the sauce to a gentle simmer for 1 minute. Season with a little salt and pepper to your taste and let cook until the parmesan cheese has melted, the shrimp are cooked through and the sauce has thickened slightly.
  4. 4Top with parsley, taste test sauce and adjust salt and pepper, if needed.
  5. 5Serve over pasta, rice, steamed veg, mashed potatoes, cauliflower rice or zucchini noodles.
