Instructions

  1. 1Pat the chicken thighs dry with paper towels, then season all over with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Once shimmering, add the chicken thighs skin-side down and sear for 6–8 minutes until golden brown, then flip and sear the other side for 4–5 minutes until no longer pink inside and internal temperature reaches 165°F. Transfer to a cutting board.

Simmer for 12–15 minutes over medium heat, stirring occasionally, until the pasta is al dente and the liquid has reduced slightly.
