Ingredients

4 servings
  • 80/20 Ground Beef(454g)

Standard ground beef. Drain fat thoroughly after cooking to reduce calories.

  • Taco Seasoning, Packet (E.G. Old El Paso)(30g)

Taco seasoning packet — Old El Paso or McCormick. Low sodium if available.

  • Vegetable oil
  • Flour Tortillas
  • Lettuce, Iceberg
  • Cheddar Cheese
  • Sour Cream

Regular or fat-free both work. Fat-free is thinner but saves ~40 cal/serving.

  • Cilantro, Fresh
  • Pico De Gallo, Fresh
  • Salsa, (Optional)

Instructions

  1. 1Place the beef in a large skillet over medium-high heat. Cook, breaking it up with a wooden spoon, until browned, about 8 minutes. Add the taco seasoning and 1 tablespoon water and cook, stirring often, until thickened and bubbly. Remove the skillet from the heat.
  2. 2Meanwhile, in a medium skillet, add ¼-inch of vegetable oil over medium heat. Once the oil is glistening, add one tortilla and cook undisturbed until golden brown, about 1 minute. Flip and repeat on the other side. Transfer the tortilla to a paper-towel lined plate. Continue with remaining tortillas, adding oil as needed.
  3. 3Divide the beef evenly among the tortillas. Top with desired amount of shredded lettuce, shredded cheese, sour cream, cilantro, pico de gallo and salsa, if using.
