Instructions

  1. 1Chop red potatoes and put on a pan
  2. 2Season with garlic salt and pepper
  3. 3Bake at 400°F for 35 minutes
  4. 4Season steak with full pack of taco seasoning and garlic salt in a bowl to spread evenly
  5. 5Cook steak for 3 minutes on one side, 4 minutes on the other (internal temp 128-132°F)
  6. 6Let steak rest for 5 minutes, then chop
  7. 7Add green peppers, red pepper, lemon juice, lime juice, cottage cheese, half pack taco seasoning, and mozzarella cheese to food processor
  8. 8Blend into sauce
  9. 9Once potatoes are done, mix sauce with potatoes
  10. 10Plate steak and potato mixture equally into 7 meal prep containers
