  • 1 Mexican seasoning blend(3g)
  • 250 g Yellow Onion, diced
  • 200 g Spinach, diced
  • 200 g Bell Pepper, diced
  • 1 Zest from 1 lime(45g)
  • 8 oz Cheese, Pepper Jack, shredded
  • 6 Crimpit flatbread wraps(1200g)
  • 5 Olive oil(1000g)

    Regular (not extra-virgin) olive oil for high-heat cooking. EVOO for dressings.

Instructions

  1. 1Season chicken tenders with all-purpose Mexican seasoning.
  2. 2Cook chicken for 3-4 minutes on each side.
  3. 3Dice onions, radish, and peppers. Add lime zest and squeeze lime juice over the top (poke holes in lime with fork first).
  4. 4When chicken is halfway through cooking on second side, pull to half the pan and add vegetable mixture. Let simmer for 4 minutes.
  5. 5Shred cooked chicken and mix with peppers.
  6. 6Shred the block of pepper jack cheese.
  7. 7Fill crimpit with chicken mixture and cheese. Close for 20 seconds to seal. Repeat 6 times.
  8. 8Spray pan with avocado oil and toast all 6 quesadillas.
  9. 9Place into 6 meal prep containers.
