Instructions

  1. 1Heat oven to 300°F with a rack in the center position.
  2. 2In a small bowl, combine the chili powder, paprika, garlic powder, onion powder, and cayenne pepper.
  3. 3Remove the thin membrane from the back of the pork ribs by sliding a paring knife under it, then use a paper towel to grip and peel it away from the rack. Discard the membrane.
  4. 4Rub the seasoning mixture evenly all over both sides of the ribs, then arrange them meat-side up on a large rimmed sheet pan, trimming and fitting as needed. Cover the sheet pan tightly with aluminum foil and bake at 300°F for 2½ to 3 hours, until the meat easily falls off the bone when tested with a fork.
  5. 5Remove the ribs from the oven, carefully peel back the foil, and brush both sides generously with the BBQ sauce.
  6. 6Turn the broiler to HIGH and return the ribs to the oven. Broil for 2 to 4 minutes, until the BBQ sauce begins to caramelize and turn dark brown at the edges.
  7. 7Remove from the oven, lay the foil loosely over the ribs, and let them rest for 10 minutes.
  8. 8Divide the ribs evenly among 6 plates or cutting boards while still warm. Serve with the remaining BBQ sauce on the side.
