  • Bell Pepper
  • Bell Pepper
  • Pineapple
  • Yellow Onion
  • Olive oil(30g)

    Regular (not extra-virgin) olive oil for high-heat cooking. EVOO for dressings.

  • Sesame Oil, Toasted(1g)
  • Cilantro, Fresh(60g)
  • Garlic(120g)
  • Soy Sauce, Low Sodium(80g)
  • Orange Juice, Fresh(60g)
  • Honey(45g)
  • Olive oil(45g)

Instructions

  1. 1If using wooden skewers, soak them in a large pan of water for at least 30 minutes before cooking.
  2. 2Combine the chicken and half of the Hawaiian teriyaki sauce in a large ziplock bag or bowl, and toss until the chicken is evenly coated.  Seal or cover, and refrigerate for at least 20 minutes.
  3. 3Meanwhile, chop up the veggies and pineapple, and add them to a large bowl.  Toss with the olive oil until evenly coated.
  4. 4Then when the veggies, pineapple and chicken are all ready, thread them onto the skewers.  (I went in “rainbow” order — red peppers, chicken, pineapple, green peppers, red onion, repeat.)  Season each skewer with salt and pepper.
  5. 5Heat the grill to 400°F, and brush the grates with extra olive oil.
  6. 6Place the skewers on the grill, and cook for 4-5 minutes per side, or until the chicken is cooked through and no longer pink inside.  Remove the skewers from the grill.
  7. 7In a small bowl, whisk together the the reserved (unused) teriyaki sauce with the sesame oil, then brush the sauce onto on both sides of the skewers.  Sprinkle with cilantro, and serve immediately.
  8. 8Whisk all ingredients together until combined.
