Ingredients

6 servings
  • Soy Sauce, Low Sodium(120g)
  • Brown sugar(80g)
  • Garlic(120g)
  • Ginger, Fresh Root(8g)
  • Sesame Oil, Toasted(5g)
  • Beef Roast(907g)
  • Green Onion (Scallion)
  • Cornstarch(15g)
  • Sesame seeds(15g)

Instructions

  1. 1Mince the fresh garlic and grate the fresh ginger root. In a bowl, combine the low sodium soy sauce, brown sugar, and 1/2 cup water, stirring until the brown sugar is fully dissolved. Add the minced garlic, grated ginger, and toasted sesame oil to the mixture and set aside.
  2. 2Slice or cube the cooked beef roast into bite-sized pieces. Slice three of the green onions into 1.5–2 inch sections and reserve the remaining green onions for garnish.
  3. 3Place the beef and sliced green onion sections in a large pot or Dutch oven over medium heat. Pour the soy sauce mixture over the beef and stir to combine. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15–20 minutes until the beef is heated through and flavors meld, stirring occasionally.
  4. 4In a small bowl, dissolve the cornstarch in 2 tablespoons of water. Slowly pour the cornstarch slurry into the pot with the beef while stirring constantly. Cook over medium heat for 3–5 minutes, stirring frequently, until the sauce thickens and coats the back of a spoon.
  5. 5Remove from heat and taste for seasoning. Garnish with sesame seeds and the reserved sliced green onions.
  6. 6Divide the beef and sauce evenly into 6 airtight containers while hot. Allow to cool to room temperature before sealing and refrigerating.
  7. 7Store in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a microwave or stovetop over medium heat until warmed through, adding a splash of water if the sauce has thickened too much.
