Ingredients

4 servings
  • Chicken Breast, Boneless Skinless

Boneless skinless. Buy in bulk and freeze — Costco rotisserie packs work too.

  • Vinegar, Balsamic(240g)
  • salt and pepper
  • Strawberries
  • Cheese, Mozzarella, Fresh(113g)

Part-skim mozzarella. Pre-shredded bags are convenient for meal prep.

  • Basil, Fresh(60g)

Instructions

  1. 1Pat the chicken breasts dry with paper towels and season generously with salt and pepper on both sides.
  2. 2Heat 2 tablespoons of balsamic vinegar in a large skillet over medium-high heat. Once shimmering, add the chicken breasts and cook 6–7 minutes per side over medium-high heat, until golden brown and the internal temperature reaches 165°F when measured at the thickest part. Transfer to a cutting board and tent with foil.
  3. 3Pour the remaining balsamic vinegar into the same skillet (do not rinse) and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer for 8–10 minutes, until reduced by half and syrupy. Remove from heat and set aside.
  4. 4While the vinegar reduces, halve the strawberries and tear the fresh basil into bite-sized pieces. In a small bowl, gently combine the strawberries, fresh mozzarella, and basil with a pinch of salt and pepper.
  5. 5Slice the chicken breasts into strips or leave whole, depending on preference.
  6. 6Divide the chicken evenly among 4 airtight containers while still warm. Top each portion with an equal amount of the strawberry caprese topping.
  7. 7Drizzle each container with the reduced balsamic vinegar.
  8. 8Seal containers and refrigerate for up to 4 days. Reheat gently in a skillet over medium heat for 3–4 minutes, or enjoy cold.
