Ingredients

4 servings
  • Chicken Breast, Boneless Skinless(454g)

Boneless skinless. Buy in bulk and freeze — Costco rotisserie packs work too.

  • Zucchini
  • Yellow Onion
  • Lemon
  • Olive oil(30g)

Regular (not extra-virgin) olive oil for high-heat cooking. EVOO for dressings.

  • Za'atar seasoning blend(45g)

Instructions

  1. 1Cut the chicken breast into 1½-inch cubes, then cut the zucchini into rounds and the onion into chunks. Cut the lemon into wedges. Pat the chicken dry with paper towels.
  2. 2Place the chicken, zucchini, onion, and lemon in a large mixing bowl. Drizzle with the olive oil and toss until evenly coated. Sprinkle the za'atar seasoning over the mixture and toss again until all pieces are well seasoned.
  3. 3Thread the chicken, zucchini, onion, and lemon onto skewers, alternating ingredients and distributing evenly. If using wooden skewers, soak them in water for 30 minutes before threading.
  4. 4Heat a large skillet or grill pan over medium-high heat for 2 minutes until hot. Place the skewers on the pan in a single layer.
  5. 5Cook for 4–5 minutes without moving, until the chicken develops golden-brown char marks. Flip the skewers and cook for another 4–5 minutes over medium-high heat, until the chicken reaches an internal temperature of 165°F and is no longer pink inside.
  6. 6Remove the skewers from heat and let cool for 2 minutes. Divide evenly into 4 airtight containers while still warm.
  7. 7Store in the refrigerator for up to 4 days. Reheat in a 350°F oven for 8–10 minutes until warmed through, or eat cold.
