Notes

Built on the Greek Yogurt Sauce Base. Aji amarillo paste is available at Latin grocery stores and online (Goya and Lobo brands are common). The flavor is unlike any other chili — fruity, almost tropical, with medium heat. Use on Peruvian chicken, grilled meats, as a sandwich spread, or over rice bowls. This is the sauce at the heart of aji de gallina.
