- •Bread Crumbs, Dry, Plain(120g)
Plain dry bread crumbs. Panko works too but is lighter per cup.
- •Egg, Whole, Large
- •Garlic
- •1 teaspoon kosher salt
- •Garlic powder(3g)
- •Onion powder(3g)
- •Buffalo wing sauce(60g)
- •Olive oil(30g)
Regular (not extra-virgin) olive oil for high-heat cooking. EVOO for dressings.
- •Blue cheese dressing
- •Celery
Instructions
- 1Preheat the oven to 400°F with a rack in the center position.
- 2Grate the onion in a food processor or with a cheese grater over a kitchen towel lined colander. Pick up the corners of the kitchen towel and squeeze out the onion juice over the sink. If you use a food processor, scoop out the grated onion onto a kitchen towel and squeeze out the onion juice over the sink.
- 3In a large bowl, combine ¼ cup of the grated onion with the ground chicken, bread crumbs, egg, garlic, salt, garlic powder, onion powder and buffalo sauce until fully mixed.
- 4Using your hands, form meatballs, about 2 tablespoons each, and arrange on an oiled, rimmed sheet pan. Brush the meatballs with the olive oil.
- 5Bake for 15 to 20 minutes, or until the internal temperature of the meatballs registers 165°F on an instant read thermometer.
- 6Brush the meatballs with additional buffalo sauce and serve with blue cheese dressing and celery sticks alongside.
