Ingredients

6 servings
  • Spinach(284g)
  • Pie Crust, 9-Inch, Unbaked, Frozen
  • Egg, Whole, Large
  • 2% Milk(180g)
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Nutmeg, Ground(1g)
  • 1/4 teaspoon hot sauce (such as Tabasco (optional))
  • Ham Or Canadian Bacon(240g)
  • Cheese, Gruyere(180g)
  • Green Onion (Scallion)

Instructions

  1. 1Preheat the oven to 375°F. If using frozen spinach, thaw it in the microwave per package directions. Place the thawed spinach in a colander and squeeze out as much liquid as possible, then blot with paper towels until very dry. Set aside.
  2. 2Place the pie crust in a 9-inch pie dish on a baking sheet. Bake at 375°F for 3 minutes, then remove and prick all over with a fork. Return to the oven and bake at 375°F for 10 minutes more until light golden brown. Reduce the oven temperature to 350°F.
  3. 3In a large mixing bowl, whisk together the eggs, milk, nutmeg, salt, and pepper until fully combined and smooth.
  4. 4Scatter the dried spinach evenly over the bottom of the blind-baked crust. Sprinkle the ham, Gruyere cheese, and green onions over the spinach in an even layer.
  5. 5Carefully pour the egg mixture over the fillings, distributing it evenly. The filling should come about three-quarters up the crust.
  6. 6Bake the quiche at 350°F for 40–50 minutes, until a knife inserted 1 inch from the edge comes out clean and the center is just set (it should jiggle slightly in the very center). If the crust browns too quickly, cover it with foil or a pie shield.
  7. 7Remove the quiche from the oven and let it rest for 5–10 minutes. This allows the filling to set completely.
  8. 8Slice into 6 equal pieces and serve warm, or divide evenly into 6 airtight containers while still warm for meal prep storage.
