Ingredients
- •Lemon
- •Shrimp(907g)
- •Ketchup(240g)
- •Horseradish, Prepared(60g)
- •Worcestershire Sauce(30g)
Lea & Perrins is the standard. A little goes a long way.
- •Mustard, Dijon(8g)
Dijon mustard — Grey Poupon or store brand. Spicier than yellow mustard.
- •½ teaspoon hot sauce (we like Tabasco)
- •Applesauce, Unsweetened, Canned(30g)
- •1 teaspoon fresh lemon zest (from 1 lemon)
- •Lemon Wedges, For Serving (Optional)
Instructions
- 1Fill a large pot with water. Squeeze the juice of the lemon halves into the water, then add the lemon halves to the water. Bring to a boil over high heat, then reduce the heat to a low simmer. Add the shrimp, cover, and poach for about 4 minutes, or until bright pink and firm. Drain and cool to room temperature. Peel the shrimp and remove the vein. Chill for at least two hours before serving.
- 2In a medium bowl, mix together the ketchup, horseradish, Worcestershire sauce, mustard, hot sauce, apple sauce, and lemon zest until smooth.
- 3Serve the shrimp over ice with lemon wedges, if using and cocktail sauce on the side.
