Ingredients

6 servings
  • Bacon, Pork
  • 80/20 Ground Beef(907g)

Standard ground beef. Drain fat thoroughly after cooking to reduce calories.

  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • Garlic powder(5g)
  • Onion powder(5g)
  • Mayonnaise, Regular(240g)
  • JalapeñO Pepper
  • Lime Juice, Fresh(15g)
  • Garlic
  • Cilantro, Fresh(60g)
  • Lettuce, Iceberg
  • Cabbage, Green(360g)
  • Guacamole, Store-Bought(360g)

Instructions

  1. 1Roughly chop 3 pieces of the bacon, set aside the remaining 6 pieces bacon. In a large bowl, combine the chopped bacon, beef, salt, pepper, garlic powder, and onion powder. Form into 6 ¾-inch-thick patties, about 5 inches in diameter.
  2. 2Heat the grill on high and brush the grates with the oil (see Note). Place the patties on the grill and cook until slightly charred and the internal temperature reaches 150°F on an instant read thermometer, 4 to 5 minutes per side.
  3. 3Meanwhile, make the jalapeño aioli. To a blender or food processor, add the mayonnaise, jalapeño, lime juice, garlic, and cilantro, blend until smooth.
  4. 4To serve, layer 2 lettuce leaves, slightly overlapping onto 6 plates. Top each with 1 beef patty, ¼ cup shredded cabbage, ¼ cup guacamole, and 1½ pieces bacon. Drizzle with the jalapeño aioli. Carefully fold in the lettuce leaves to make a wrap, using a few more leaves as necessary.
